Xanthan Gum to Flour Mix Ratios

Xanthan or guar gum are essential in gluten free baking.  I add xanthan gum to all of my GF baking recipes that contain a flour mix.  These ratios work for me:

Breads:  3/4 tsp. xanthan gum per cup of flour mix

Cakes:  1/2 tsp. xanthan gum per cup of flour mix

Cookies:  1/4 to 1/2 tsp. xanthan gum per cup of flour mix
